Lime-Vegetable Mold

Directions:

Combine all ingredients except the 1 cup of water and agar-agar in a blender. Blend until fairly smooth. In a separate 2-quart microwave bowl, pour in 1 cup of water and sprinkle in the agar-agar. Microwave until all the agar-agar is dissolved (about 5 minutes on high power.) Quickly whisk blender ingredients into the hot liquid until fully combined. Pour into molding container and chill until firm. (Serves 8)

Ingredients:

  • juice from two small (or one large) limes
  • 2 tablespoons unbleached sugar
  • 1/4 cup water
  • 2 teaspoons cider vinegar
  • 1/4 small onion, chopped
  • 1 medium carrot, cut into small pieces
  • 1/2 small green bell pepper, chopped
  • 2/3 cup of your favorite vegan salad dressing (thicker is better)
  • 1 cup tofu, cut into small pieces
  • 1/2 teaspoon salt
  • 8-ounce can crushed pineapple, drained
  • 1 cup water
  • 3 slightly-rounded tablespoons agar-agar
