Directions:
In a large skillet, toss all ingredients
together. Cover and simmer for
45 minutes or until tender, stirring occasionally. (Serves 4)

- 1 small turnip, peeled and cubed
- 2 carrots, cut into one-inch pieces
- 1 green bell pepper, cut into one-inch
pieces
- 8 ounces extra-firm tofu, cubed
- 2 tablespoons olive oil
- 1 tablespoon cider vinegar
- 1/8 teaspoon freshly-ground black
pepper
- 1/2 teaspoon salt
- 1 and 1/2 teaspoons dried sage
- 1 and 1/2 teaspoons dried marjoram
- 1 and 1/2 teaspoons dried thyme
