Directions:
Preheat oven to 350 degrees F. In a large
bowl, mix together sugars, margarine, and apple sauce until creamy. Add powdered
egg substitute, water, soy milk, and vanilla extract. Mix well. Mix in flour
and baking soda, then add oats and cranberries. Spoon dough onto lightly-greased
cookie sheets and bake for 10-12 minutes. (Makes
over 3 dozen cookies) |

- 1 and 3/4 cups unbleached flour
- 2 and 1/2 cups oats
- 1 and 1/2 cups brown sugar
- 1/4 cup unbleached, granulated sugar
- 1/2 cup apple sauce
- 1/2 cup non-hydrogenated margarine
- 3 teaspoons powdered egg substitute
(EnerG Egg Replacer or other brand)
- 3 tablespoons water
- 2 tablespoons soy milk
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 8 ounces dried, sweetened cranberries
(or raisins, if desired)
