Middle Eastern Raw Wild Rice Pilaf

Directions:

In a large mixing bowl, hand-mix all ingredients, ‘massaging’ by hand to allow the avocado to become creamy. (Serves 4)

Ingredients:

  • 1 cup wild rice, soaked 3 days, rinsing twice per day
  • 1-1/2 cups avocado, diced
  • 2 tablespoons lemon juice
  • 1-1/2 tablespoons fresh sage, minced
  • 2 tablespoons fresh oregano, minced
  • 1/4 cup parsley, chopped fine
  • 2 tablespoons fresh dill, minced
  • 1 cup tomato, seeded and diced
  • 3 tablespoons flax oil
  • 2 tablespoons cinnamon, ground
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon celtic salt
