Herbed Tofu & Vegetable Medley

Directions:

In a large skillet, toss all ingredients together. Cover and simmer for 45 minutes or until tender, stirring occasionally. (Serves 4)

Ingredients:

  • 1/2 small butternut squash, peeled, seeded, and cubed
  • 1 small zucchini squash, unpeeled and cubed
  • 1 medium-sized sweet potato, peeled and cubed
  • 1 large white potato, peeled and cubed
  • 1 large onion, cut into wedges
  • 1 small turnip, peeled and cubed
  • 2 carrots, cut into one-inch pieces
  • 1 green bell pepper, cut into one-inch pieces
  • 8 ounces extra-firm tofu, cubed
  • 2 tablespoons olive oil
  • 1 tablespoon cider vinegar
  • 1/8 teaspoon freshly-ground black pepper
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons dried sage
  • 1 and 1/2 teaspoons dried marjoram
  • 1 and 1/2 teaspoons dried thyme
